Onepot Chicken And Chickpea Pilaf



If you are wondering where is the new blog she was talking about , well, it turned out to be a lot more difficult to make so I finally decided I will first have to learn a few tech stuff and just gave up.  I work alone so trying to figure out wordpress  finally took its toll and I  just stopped. Maybe someday I will get some nice techie to help me to make a beautiful blog. So for now, lets get back to my usual topic, food!

I love one pot recipes and this one is the kind of meal I make when I have left over  roast chicken.  I love to make this  for lunch , and serve with some raita or tzatziki sauce.  And best of all not much to wash later. So I am a happy mum. I always keep some precooked chickpeas in the freezer, the boys prefer this to the canned. You can use either.

Recipe: Onepot Chicken and chickpea Stew

For 2-3

1 cup chickpeas ( precooked ones or canned)
1 cup cooked chicken( shredded )
1/2 cup  baby spinach( or use regular spinach shredded ) or leave it out if you don't have any
1 small onion , chopped
1 clove garlic, chopped
1/2 tsp grated ginger
3/4 cups basmathi rice
1 tsp tomato paste
1-2 tbsp finely chopped coriander leaves
1 chicken stock cube
1/4 tsp tumeric
1/4 tsp cinamman
1 bay leaf ( or use curry leaf if you dont have, although its not the same but its ok)
 1 tsp ground cumin
salt to taste ( about 1 tsp)
2 cups  hot water
2-3 tbsp olive oil


Heat a large sauce pan, or deep frying pan, add olive oil. Once oil heats up add onion, and cook to soften.

Add garlic, ginger, bay leaf  and  cook for a  minute before adding the rest of the spices , tomato paste and a splash of water. Stir to cook the spices a little.

Dissolve the stock cube in  the hot water and set aside.  Add the rice to the pan and stir it around.  Stir in chicken and chickpeas and add the prepared stock.  Let the rice  cook , once the water evaporates from the top, put the lid on and cook over a low heat for 5 minutes.

Remove lid, add the spinach and coriander leaves and stir it around. Place the lid back on and then after a few mniutes, serve.  The spinach will be cooked but still green.

Serve with some yogurt sauce and tomato salad. Enjoy!

Steak with Black Pepper Sauce



I love steak but  very rarely do I come across a well made steak in restaurants here, most of the time I end up with tough over cooked piece of meat that leaves me regretting why I even ordered it.  It was until I tried the steak and taties at Newport that I was at least satisfied. NO I am not advertising the place I just enjoys their food!.
My cooking with steak is  not so good either,  so I usually stick to beef stews when cooking at home or a simple stir fry.  Fantasy store has some really good quality beef , pricey but tastes good. Anyway I saw this recipe on youtube , Steak au Poivre  made by Manu Feildel.

Sauteed Mushrooms on Toast with a Poached Egg



I am not a big breakfast person, and weekday breakfast time is a real rush , like in any house. We usually sit down for breakfast at 6 in the morning, I always make sure the boys leave for school with a full stomach.  Its usually bread or toast with eggs ( eggs are occasionally as the older one gags) and  the regular spreads such as nutella  and a banana each along with  a glass of milk.

Passionfruit Meringue Roulade



I love meringue, whether its in plain mini ones , pavlovas  etc.  After making pavlovas I wanted to do something abit more challenging. Having seen this recipe on one of my magazine cut outs, I wanted to give it a try. It was a lemon curd meringue roulade.

Salad Nicoise


So  as you might have noticed I do very few salads, but that doesn't mean I don't eat vegetables, just that eating a bowl of salad  as a meal is not easy as the rest of the family especially the husband will freak out. But I am not getting any younger , going to be the big 4-0 soon in  a years time so I  am determined to try and eat a salad bowl as a meal now and then.  I made this Nicoise salad  one afternoon,  and felt good afterwards. It was quite filling too.

Nadhiya Hussain's Bengali Korma

                  The first time I heard about Nadhiya Hussain was   on Facebook. She was the first second generation Bangladeshi  Bristish muslim (not to mention hijab clad) to win the Great British Bake Off. Now she has released a cook book done television shows.
So when the ladies in Muslimah Food bloggers group announced  that this month's challenge was  to create a Bangladeshi recipe I decided to try her Bengali Chicken Korma.

Trip to Srilanka, (Nuwara Elliya/ Kandy)


During the school holidays, we decided to visit Sri Lank, much to the surprise of one of my  friends from the school group. " most parents in our school doesnt go to sri lanka"? I was like , whats wrong with Sri Lanka? ".   We don't visit Sri Lanka that often, the last time we went was two years ago and that was for my father's heart bypass surgery, so it wasn't really a vacation , the kids were stuck in an apart ment and kept them selves entertained indoors.

Tuna and White Bean Stew


In Maldives we get tuna fresh from the surrounding sea and although we make it into curries and smoke them, I wanted to make something different. I saw this recipe , via pinterest where some white fish is cooked with white beans in tomato sauce and flavored with basil.  I decided to use tuna instead and basil can be easily found  in Maldives, White beans is not especially in the islands. So the second time I did this recipe I used a can of baked beans.
